A librarian was an individual who worked at or were in charge of libraries and archives. Librarian droids such as Kalibac librarian droids were sometimes used for this task as well.
Jedi Librarians
The Jedi Order had several libraries, including the Great Jedi Library and the Jedi Archives on Coruscant, as well as several branches, such as the Ossus and Tython Archives. These were all established, operated, and managed by Jedi archivists such as Jocasta Nu, Odan-Urr, and Gnost-Dural.
Other Libraries
The Death Star was known to have had a library, which was operated by Atour Riten. BRT supercomputers were used by a library on Obroa-skai.
