A Gandok was something that could be held, and was used as a metaphor.
Behind the scenes
Gandoks were only mentioned in the bio quote for Jek Porkins in the first edition of Galaxy Guide 1: A New Hope, and appear to correlate to horses, as in the phrase "hold your horses." The quote was removed for the second edition printing of the book.
